If you are looking for a mind blowing meal, look no further! This slow-cooked pork was so good, my Husband re-proposed – haha! Enjoy!!
3 ½ pound pork shoulder
2 tablespoons Sea Salt
4 cloves of garlic, minced
4 tablespoons paprika
1 tablespoon black pepper
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon dried thyme
1/3 cup apple cider vinegar
3/4 cup raw honey
1 tablespoon cold water
INGREDIENTS FOR SLAW:
1/4 head red cabbage
1/2 red bell pepper
1/2 cup matchstick carrots
1/2 lime, juiced
Honey, to taste
Apple Cider Vinegar, to taste
Sea Salt, to taste
Place the pork in the crockpot, fat layer on the bottom.
In a medium bowl, mix the salt and garlic together. Add the paprika, black pepper, cayenne, and thyme and whisk together to mix well.
Pour in the vinegar and stir until fully mixed. Add the honey and stir until completely mixed.
Pour the paprika-honey mixture over the pork, scraping the bowl to get out every last bit of goodness, then cook on low for 7-8 hours or on high for 5-6 hours until the pork is tender and pulls away easily with a fork.
For the slaw …
Cut the cabbage and pepper into slices and toss together with the carrots.
Add the lime juice and then season with honey, salt and apple cider vinegar based on your taste preferences.
Serve the pork on a roll and top with slaw!!!
