You’ll thank me later for this one! So easy and so delicious! Plus, who doesn’t love one-pot meals!?
1 medium onion, chopped
1 can (14 1/2 ounces) diced tomatoes, undrained
1 can cannellini beans, drained and rinsed
1 teaspoon Basil Leaves
1/2 teaspoon Black Pepper
1/2 teaspoon Garlic Powder
1/2 teaspoon Oregano Leaves
1/2 teaspoon sea salt
6oz spinach leaves
1. Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 10 minutes or until browned. Add onion; cook and stir 5 minutes or until softened.
2. Stir in tomatoes, beans and seasonings. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 3 minutes or until heated through.
3. Stir in spinach; cook 2 minutes or until spinach begins to wilt.
