Pasta with Veggie Purées and cheese (baby food)

Meal Planning for a Nine Month Old

I am one of “those Moms” the one that makes her child’s food, it makes me happy!

Pasta with Puréed Carrots & Cheese
AND
Pasta with Puréed Broccoli & Cheese

Ingredients:
2 1/2 cups wheat or veggie pasta (measured uncooked)
2 whole carrots, peeled
1/2 cup broccoli florets, I used frozen
Veggie or Chicken Stock
2TBS Cheddar Cheese

Instructions:
1. Boil pasta in stock of your choice (follow box instructions). Before draining, save the stock as you will use it to boil the carrots in.

2. Chop carrots to bite-size pieces.

2. Once you have drained the pasta and reserved the stock, set the pasta aside and return the stock to your pot, add the carrots and boil until soft.

4. Remove carrots and put into a food processor or blender. Add cheese and pulse until it forms a sauce. Use the remaining stock to thin the sauce if desired.

5. Toss pasta in the sauce.

I like to portion the pasta out into muffin tins and freeze. Once frozen, I pop out the “pasta muffins” and put them in a labeled zip-lock bag.
