Thanksgiving got me thinking … We don’t baste food nearly enough!
2-3 boneless skinless chicken breasts
2 tbsp soy sauce
1 tbsp light brown sugar
2 tbsp red wine vinegar
3 tbsp olive oil
1/2 small yellow onion, finely chopped
2 cloves of garlic, minced
Pepper, to taste
Handful of fresh parsley
1. Preheat oven to 425.
2. In a large baking dish, combine all ingredients (except parsley) and toss with chicken to coat well.

3. Roast for 10 minutes then baste – return to the oven and roast another 10 minutes – remove and baste again – roast the last 10-15 minutes until the chicken begins to brown. Remove and baste with marinade.
4. Garnish with lots of fresh parsley
